Kitchen and Housewares Reviews of Emeril Stainless 10-Piece Cookware SetCustomer Review: Thanks to all reviewers, I bought a great product. Summary: 5 Stars
After 20 years of service, my Farberware pans deserved a dignified retirement. I went to ConsumerReports.org and found several choices for good replacements. I wanted pans that performed well, were dishwasher safe (because I hate washing by hand), weren't too heavy (for safety and more enjoyable cooking), and looked good (because I have a tiny urban kitchen and some of these pots would be hanging rather than stored in cabinets).
I did other research on Amazon.com and other review sites and found the comments here the most helpful; they helped me to narrow the choices. But I realized that I couldn't order online because I wanted to feel the products first. At Bed Bath and Beyond they had a great selection and conveniently placed the All-Clad (which was rated lower than Emerilware by ConsumerReports.org!) on the aisle right next to the Emerilware. So it was easy to compare the pans side by side, and I liked what seemed to be the slightly lighter weight of the Emerilware--I don't want to have to use two hands when lifting a saute or fry pan and I don't want to take a chance on dropping pans. Since I don't plan to bop any errant spouses with the pans, I don't find the thinner sides to be a problem!
I also checked out several other highly regarded lines. The Emerilware seemed to fit what I wanted really well and was a reasonable price, so I bought a 10-piece set (and also received a bonus certificate for an Emeril knife worth about $30, which you have to mail in). I think it's unfortunate that there aren't more lighter weight choices--some lines I rejected just because they were so heavy and the Emerilware is not lightweight, as others have said here. I imagine a lot of consumers equate weight with quality, so the manufacturers have not focused on producing lighter weight high quality items that might be easier for us weaklings to handle.
When I cooked with them I was delighted. I really like the feel of the handles; they have an indentation just where I would place my (small) fingers; for people with bigger hands, you might want to try them out for feel. I would emphasize what others here have said about keeping the flame very low. I used Pam and had no sticking problems, the food cooked very nicely. I just had to get used to the gently sloped sides of the pan--it is a little tricky to turn food with a wooden spoon, compared to my old, more vertical Farberware, but the sloped slides also make it easier to move more cooked portions to the cooler sides of the pan so they don't overcook while the rest finishes. So I am sure I will learn the knack for this quickly.
I noticed also that I have to place the small pan carefully on my gas stove or it will tip, due to the weight of the handle. But this is not a problem; you just have to be careful, at least on the type of stove I have (a GE).
The biggest surprise was that they make my tiny kitchen look better and updated; they are very attractive, and I hadn't realized how tired the old pans looked and what a difference it made. After seeing that impact, I want to go buy a hip new coffeemaker! An initial trip through the dishwasher didn't diminish their looks at all; of course, this may change with use.
So I want to thank all of you reviewers for helping me choose a product that I really like.
Description of Emeril Stainless 10-Piece Cookware SetMany choose stainless steel cookware for its durability and easy care (as in dishwasher safe). Others are drawn to the fact that it is non-reactive with food, even acidic foods like marinara sauce. However, all must acknowledge that stainless steel is not the greatest conductor of heat, and to circumvent this problem Emerilware stainless has a sandwich in the base of aluminum and copper, both noted for transferring heat evenly and quickly. The see-through lids and ergonomic stay-cool handles make life a bit easier and safer. There's a lot to like here, including the very reasonable price tag. With 6 useful vessels and lids to match on some, you'll find just about everything you need for cooking. Celebrity chef Emeril Lagasse kicks it up another notch with this stainless-steel cookware collection, following the success of his nonstick collection. Bam! This 10-piece set is a lustrous example of the stainless-steel collection, which is made by renowned cookware manufacturer All-Clad. Pots and pans are heavy-gauge, 18/10 stainless steel polished to a mirror finish outside and blessed with a satin finish inside to conceal utensil marks. To distribute heat uniformly and maintain it, there are thick aluminum disks on the bottoms covered in stainless steel so the cookware works on any stovetop, including induction. For elegance, the disks' edges are clad in copper. The set consists of a 2-quart saucepan with lid; a deep, 3-quart casserole pan with lid; a 3-quart sauté pan with lid that's also perfect for braising; a 6-quart stockpot with lid; and 8-inch and 10-inch fry pans. The pot and pans display Emeril's signature on their cast-stainless-steel handles, which are riveted for strength, have thumb rests, stay cool on the stovetop, and won't be harmed by an oven's highest heat. The pot and pans' lips flare to facilitate dripless pouring. Made of tempered glass, lids allow cooking to be monitored without releasing heat. Stainless-steel bands around their edges prevent chipping and ensure a tight fit. Although Emerilware Stainless cookware is dishwasher-safe, hand washing is recommended. It carries a lifetime warranty against defects. --Fred Brack What's in the Box 2-quart saucepan with lid, 3-quart casserole pan with lid, 3-quart sauté pan with lid, 6-quart stockpot with lid, 8-inch fry pan, 10-inch fry pan
